SATURDAY, NOVEMBER 8

CHAMPAGNE NOUGAT

A unique sensory experience, where the elegance of Champagne meets the refined sweetness of Rivoltini nougat.

The presence of the renowned master pastry chef and chocolatier Riccardo Magni will guide participants through a tasting journey that enhances the harmony between fruity notes, effervescence, and the creaminess of nougat in an unusual finger-food style. Three versions of the product will be presented: soft hazelnut, soft almond, and soft strawberry variegated. The latter will be paired with an olfactory sensory experience promoted by the Lumi brand, which will present its latest creation, Meraviglianza—a fragrance with notes of fresh strawberries, velvety cream, and effervescent champagne, designed to transform every moment into a second of pure beauty, suspended between dream and reality.

SHOW COOKING WITH CHEF LORENZO BARBIERI BY GINKGO

Chef Lorenzo Barbieri will interpret Rivoltini nougat in a gastronomic key, demonstrating live how to transform a confectionery excellence into an innovative creation.

A moment where technique, aesthetics, and flavor merge before the audience’s eyes. The dish will be titled “Future in Tradition,” nougat-filled ravioli in broth. A memory of collective nougat shared between Christmas and family, served in a futuristic deconstructed style and a savory version using modern techniques and pairings.

Generation after generation, this tradition is renewed, bringing authentic aromas and flavors to the Cremona Nougat Festival with their stand.
A journey of memory, territory, and love for craftsmanship. This year, the magic of Christmas takes shape in a unique creation: panettone nougat, the perfect encounter between two holiday symbols that the Capogna master nougat makers will present for tasting with Moscato di Trani to seal the perfect flavor pairing.

NOUGAT INSTALLATION IN THE SHAPE OF A MAXI COTECHINO

Can a cotechino, a staple product of the region, transition from its traditional saltiness to sweet notes and the scent of honey? The answer is yes when Rivoltini Alimentare Dolciaria of Vescovato (CR) is behind the scenes. To break all records, they will honor this emblem of local excellence by shaping their traditional nougat production into the highly unusual form of a “maxi cotechino.”

The work will come to life and be displayed to the public to be admired and photographed, but above all, tasted; at the end of the presentation, it will be portioned and distributed to all visitors curious to taste this piece of gastronomic history.
