Rivoltini takes center stage at the WONDERS OF CREMONA NOUGAT.

November has always been a special month for Cremona, the period when the city celebrates one of its most famous and beloved excellences: torrone (nougat), a symbol of sweetness and tradition for over half a millennium.

It all began nearly six hundred years ago when, to honor the wedding of Bianca Maria Visconti and Francesco Sforza, the pastry chefs of the time created a sweet made of honey, almonds, and egg whites, shaping it into an elongated form that resembled the Torrazzo, the famous bell tower standing over 112 meters tall. From that intuition, a product was born that was destined to become a gastronomic and cultural icon, capable of spanning centuries without ever losing its identity.

Today, this tradition lives and grows thanks to the work of companies like Rivoltini Dolciaria, officially active since 1927 and guardian of artisanal knowledge passed down from generation to generation. This world of ancient gestures and authentic passion has been chronicled by journalist, storyteller, and local influencer Stefano Cantiero in the new video published on his channel Ti porto io.

Cantiero visited the Rivoltini laboratory at the height of production for the 2025 Nougat Festival, of which Rivoltini is the main sponsor.

The images capture the magic behind the scenes:

  • expert hands shaping the nougat in beechwood frames,

  • the enveloping scent of toasted almonds and hazelnuts,

  • the precision of operators repeating gestures perfected over nearly a century of company history,
